Lamb & Chevon

lambsWest Wind Farms' Pasture Lambs are certified organic Katahdins, a "hair" sheep raised for its meat, not its wool, so they are heavier and meatier than wool breeds. Our lambs are raised naturally with their mothers on lush pasture. This healthy environment produces a happy animal and a high quality, nutritious meat. Lamb grazed on rich green pasture is rich in easily absorbed minerals and B vitamins - particularly B6 and B12. Lamb is also nature's best source of carnitine, an amino acid that the body uses to transfer fatty acids across the membranes of the mitochondria, where they can be used as a source of fuel to generate energy. Carnitine is an especially important nutrient for the heart. The fat in lamb is a good source of palmitoleic acid, a fatty acid with strong antimicrobial properties. Besides all this good nutrition, West Wind Farms Pasture Lamb is also tender with a mild, delicious flavor, and it's certified organic!

All lamb is aged for one week.

CHEVON (GOAT)
Goat meat, also known as chevon, is a very lean meat, one of the leanest of all red meats. It is a good substitute for other ground meats in low-fat diets, and works well in tacos, meatloaf and meatball recipes. We like plain and simple chevon burgers. Try it, we think you'll like it!
